Can I configure I'm InTouch GoMail to notify me for emails received from a certain domain only (e.g. all emails from "mycustomer.com")?

Yes, I'm InTouch has an intelligent notification feature that you can configure to trigger a notification only for emails coming from a certain email address or all emails from a certain domain (e.g. "mycustomer.com"). Double click on the I'm InTouch "green satellite dish" on the system tray --> Notification --> Add.
